Cheesecake with berries

Ingredients:

  • 2.5 dl vanilla cakes (crushed)
  • 125 g melted butter
  • 450 g cream cheese
  • 4 eggs
  • 2 dl sugar
  • 1 dl flour
  • 1 dl whipping cream, hard whipped
  • 2 teaspoons vanilla sugar
  • to the sauce: 1 liter of red berries (blackberries, strawberries, cherries, raspberries, etc), 1 dl water and 2 dl sugar

Cooking:

  1. Crush the cakes, melt the butter and mix with your hands. Then cover the bottom of a mold with a removable edge with this mixture. It will be the bottom of the cake.
  2. Then mix cream cheese, eggs, sugar and vanilla sugar in a bowl. Sift down the flour and stir. Add the cream by gently turning it over. Pour the mixture into the mold and bake at 175 degrees for 55-70 minutes, until it is almost completely stiff in the middle.
  3. For the sauce, heat the sugar with the water. Add the fruit when it boils. Then stir and cook until you get a syrup.
  4. After taking your cheesecake out of the oven, let it cool and put it in the fridge for a few hours.
  5. Glaze it with the red fruit sauce and serve.

Stuffed apple pie

Ingredients:

Dough:

  • 6 dl wheat flour
  • 100 g unsalted butter
  • 2 eggs
  • salt

Filling:

  • 1 kilo of apples
  • 1 dl brown sugar
  • juice from 1/2 lemon
  • ground cinnamon
  • vanilla sugar
  • anise
  • salt

Cooking:

  1. First mix all the ingredients for the dough. Knead it well. When it is completely smooth, wrap it in plastic and leave it in the fridge for an hour.
  2. After that, roll out about half of the dough and grease a pie tin. Bake at 225 ° C until the pie crust is golden brown.
  3. For the filling, peel the apples, remove the cores and cut the apples into pieces. Let them marinate for 2 hours in a covered bowl with lemon, vanilla, anise, cinnamon and sugar.
  4. Put the marinated apples in the pie crust, but without the liquid. Roll out the remaining half of the dough. Then cut strips of it to lay them crossed over the apples.
  5. Bake at 225 ° C for 40 minutes or until the pie is beautifully browned and the apples are soft.

Swiss roll with kiwi and strawberries

Ingredients:

  • 6 eggs
  • 2.5 dl sugar
  • 2.5 dl wheat flour
  • grated peel of 1 lemon
  • Whipped Cream
  • icing sugar
  • kiwi and strawberries for decoration

Cooking:

  1. Separate the egg whites from the yolks. Whisk the egg whites until they form stiff peaks. Add the egg yolks and slowly sprinkle in the sugar while still whisking.
  2. Then sift the flour into the mixture and carefully turn over. This is so that you keep the air in the batter. Finally, turn down the lemon peel.
  3. Then grease and toast a rectangular baking sheet, or cover it completely with baking paper. Pour the mixture into the pan. Bake in the oven at 175 ° C for 40 minutes. Test with a stick, it is ready when the stick comes out dry. Turn the cake upside down on a baking sheet and allow to cool.
  4. When the cake has cooled completely, spread on the whipped cream. Then roll it up into a roll cake using the paper it is on.
  5. Finally, set it in the fridge for a while. Sprinkle some icing sugar on top and cut it into thick slices.
  6. Decorate with the fruit and serve.
